Bite Me!

Now that it is the "off season" I am really trying to pay attention to my nutrition and trying new things. While I am in great shape right now, I still feel like I can drop my overall body fat percentage a bit more in prep for next season. We all know that nutrition plays a huge role in this show!

I easily get stuck in a rut with the same dishes over and over-I love eating clean but I also love easy, cheap and quick!

Over the next several months I am going to be testing out new recipes and sharing the success with you!

I have two oh-so-sweet dishes to share this week and hope you enjoy them as much as I do.

Banana Bread French Toast

Monday Morning breakfast with a side of egg whites
I came up with this easy breakfast one morning when I was craving something sweet-it's easy and filling. Plus it is versatile. You could sub in peaches & pecans for a Peach Cobbler style french toast or even berries & almonds.


  • 2 slices Ezekiel bread (or other sprouted grain bread ie Trader Joe's)
  • 1 whole egg & 2 egg whites OR 1/3 cup of Egg Beaters
  • 1/2 teaspoon real vanilla extract
  • a splash of your favorite milk product (cow milk, almond milk, rice milk, soy milk)
  • dash of cinnamon
  • dash of stevia (or your favorite sweetener)
 Topping
  • 1 small banana
  • handful of chopped walnuts
  • REAL Maple Syrup or honey

Heat a skillet (medium heat) and spritz with your favorite oil. I like coconut oil for this one

In a bowl, mix up your egg, cinnamon, stevia. Dip each slice of bread into the egg mixture, making sure that you get the bread well saturated.

Put each slice of bread onto the heated skillet and cook until golden on each side.
Top with banana slices, walnuts and a drizzle of maple syrup or honey.

This is great with a side of greek style yogurt too-This is the perfect recovery breakfast after an early morning training session or even just a healthy way to start your day!

Awesome Balls

I cannot take credit for this amazing goodie, snack/recovery snack. I found this on the community boards of  The Eat Clean Diet and could not wait to try it out. The original recipe called these Peanut Butter Balls but really?? That was boring. They taste like awesome. So I call them Awesome Balls. I mean really anything made with peanut butter has got to be good right??  I am going to attempt this recipe with Almond Butter too to see how that comes out! Then I can call those Awesome Almond Balls...

•1 cup crunchy style peanut butter
•1 cup honey
•1 cup non fat dry milk
•1 cup wheat germ
•3/4 cup protein powder (vanilla is what I used but sure chocolate could be yummy)
•1/4 cup sesame seeds

Mix and roll!! It can get a bit tough to mix this dough so make sure you bring your A game to the mixing bowl--call it a workout session and enjoy one of the AWESOME BALLS as a reward.


Roll the balls in the sesame seeds. Feeling frisky?? Add a dark chocolate chip to the center. AWESOME.
Really...

These store well in the fridge.

I'm with you...I eat the same things over and over. BORING! These both look so yummy! I am a green monster breakfast girl...every morning...almond milk, banana, flax oil, blueberries, spinach, and protein powder. I'm going to have to try making those amazing balls!

I love to take a whole wheat tortilla, and load it up with beans, veggies, and salsa, soooo good.

My goto is spinach, black beans and salsa with a large side of fruit. May throw in a wheat tortilla if I am really hungry

PS, I wouldnt drive 10 hours for a 5k, its a "tad" bigger, but still a long shot, some things need to happen for it to happen
