Well 'tis the season for PUMPKIN anything and everything so I have be experimenting with all kinds of pumpkin this and pumpkin that...
After an early morning CrossFit workout this week, I was in a hurry to grab a bite to eat. Glancing into my fridge, a couple of things grabbed my attention-
Vanilla Greek Yogurt
leftover pumpkin puree from the previous days breakfast of Pumpkin Pie French Toast
then inspiration hit!
I mixed some Greek yogurt (about 3/4 of a cup)
with a big scoop of pumpkin (~2 heaping tablespoons)
I added some cinnamon, clove and nutmeg (you could, of course, use pumpkin pie spice mix)
then a dash of stevia (or your favorite sweetener)
a splash of vanilla
some walnuts (feel free to substitute pecans, almonds)
and finished it off with some granola-I used Maple Pecan flavor from Sweet Home Farm granola (yummmm)
You could use any crunchy cereal you have on hand or your favorite granola. This is the key ingredient-it mimics the crunch of crust!!
Mix it up and enjoy. Fabulous
Tastes just like Pumpkin Pie!!
but without the guilt.

ReplyDeleteMy favorite pumpkin recipe is a pumpkin dump cake we make at Thanksgiving. It is SO very decadent and bad for you. My favorite healthy pumpkin dish is probably healthy muffins or a BFL pumpkin cheesecake I used to make. Hm...I'll have to pull out that recipe and see if it is as palatable as I remember...or if it just tasted good because I was not really eating sweets at the time...

ReplyDeleteWhat a great idea to mix some pumpkin puree into your yogurt! I mix puree into so many things but never thought about that one....gonna give it a try for breakfast tomorrow!

ReplyDeleteI have a similar recipe, although I thought the yogurt was brilliant. I make up french toast batter (eggs, nutmeg and vanilla) and put pumpkin into it. Then I use a cupcake pan and line each one with a slice of bread and pour my batter into it. It makes a yummy custard type thing.

ReplyDeleteFor lunch today I had a Sesame Wasa crisbread with a Laughing Cow Cheese wedge spread over it... and then I topped it with some pumpkin, mixed with Splenda, and cinnamon, cloves and ginger.
Just like pumpkie pie!
